Celery

THIS week I was thinking about celery, oh so common, yet what is it good for besides those ants on a log snack for kids (ya know, peanut butter down the middle of a length of celery with the raisins on it! ) Here is what I learned:

  • good for lowering blood pressure & cholesterol
  • replaces lost electrolytes
  • balances pH in our bodies
  • anti-inflammatory health benefits, including its protection against inflammation in the digestive tract itself
  • antioxidants like vitamin C and flavonoids, AND scientists have now identified at least a dozen other types of antioxidant nutrients in celery (Flavonoids are naturally occurring plant pigments that work as antioxidants and have the capacity to combat free radicals in the body. Some of these flavonoids help fight cancer.)
  • steaming celery retains WAY more of its nutrients than boiling or blanching
  • also a high vitamin K veggie (just learned also that Vit. K is NOT same as potassium which is a mineral, dang it's complicated) - 33% of daily value recommended - pretty good
  • has a soothing/calming effect on your nerves - celery juice can help with insomnia & anxiety

When we've cut into the organic celery to add to "Geoff's Chop" I am AMAZED by the incredible aroma different from conventional celery I've purchased in the past.  WOW! WOW! is all I can say!
