ABC Wheat Bread

Description

Marjorie calls this nutritious bread “ABC” for the apples, bananas and carrots it contains.  Makes 3 loaves – one to savor today and a couple to freeze for summer meals or quick snacks.

Ingredients

1 1⁄2 c
warm water (105-110°F)
2 pk
active dry yeast
1 t
granulated sugar
1 c
finely chopped apple (Honey Crisp or Granny Smith)
1 c
bananas (mashed)
1 c
carrots (finely chopped)
1⁄2 c
nonfat dry milk
1 T
orange peel (freshly grated )
2 t
salt
1⁄4 c
honey
1⁄2 c
flaxseeds (ground golden)
5 c
King Arthur white flour (unbleached whole wheat)
2 T
vital wheat gluten (optional)
1 1⁄4 c
King Arthur bread flour

Instructions

  1. In a large electric mixer bowl combine water, yeast and sugar. 
  2. Let stand 5 minutes to proof yeast. 
  3. Stir in rest of ingredients. 
  4. Using the electric mixer’s dough hooks, knead dough 5 to 8 minutes on low speed. If dough does not form a ball around the dough hooks, add 1 to 2 tablespoons more flour. 
  5. Place dough in greased bowl, cover and let rise in a warm place until double.
  6. Punch down dough, roll dough up like a jelly roll, and seal edges and ends. 
  7. Place each in a greased 8 ¼ x 4 ½ inch loaf pan. Cover, let rise in a warm place until double.
  8. Bake in preheated 375° ovens for 25-30 minutes until golden brown. 
  9. Remove loaves from pan and place on a wire rack to cool.  Brush tops with butter if desired.
