Cauliflower Pizza Crust

Here is another way to incorporate the great health benefits of vegetables into our meals. Cauliflower's superb texture and ability to absorb flavors gives pizza a special bonus.


cauliflower (organic)
eggs (pasturized)
2 c
parmesan (shredded raw)
1 T
Italian seasoning
1 T
sea salt


  1. Chop cauliflower heads into smaller pieces and pulse in a food processor (or chop more) until it resembles rice.
  2. Spread it evenly on a baking sheet and bake at 425° until it becomes fragrant (about 10 minutes)
  3. Lay a flour sack towel inside of a large bowl and dump the cauliflower into the towel, letting the cauliflower cool completely
  4. Squeeze the cauliflower inside the towel to get the liquid out. You will be amazed at how much actually wrings out!
  5. Now add in the rest of the ingredients and mix well with your hands
  6. Spread onto a Silpat (silicone) lined baking sheet. Parchment paper may work as well. Make sure you spread evenly.
  7. Bake at 425° until it starts to brown on the top, then take it out and flip it
  8. Bake an additional 10 minutes
  9. Now, add your favorite sauce and toppings
  10. Top with cheese and bake again until the cheese is melted
